Hello! So glad you found me. As I mentioned on my About Me page, I’m on a mission to live a happy, healthy, and delicious life. I’ve had some pretty major health struggles over the last few years that have completely changed how I view food and how I need to take care of my body. Now I want to share my journey with you, and whittle down my learning curve into helpful nuggets of information for you. Here are a few things I will post about:
- Health. My journey, beginning in 2016 with a diagnosis of celiac disease and a few other digestive issues to follow. I will share how I started on the path to health (like How I Went Gluten Free) and how I implemented new lifestyle habits to start eating and living a much cleaner life. The key is keeping it simple and efficient – being super “crunchy” when it works and letting it go when it doesn’t, and practicing self-care when you can and giving yourself a break when you can’t!
- Food. Because……yum! Cooking with food sensitivities can be really frustrating. And gluten free flour, well, it’s a beast. I have created many amazingly delicious recipes that are grain and dairy free (yes, delicious enough for my gluten and dairy-eating husband to dig in too!). I got to success through a lot of trial and error, and I’m excited to share the end products! I’ve also learned to cook quickly and efficiently and build a stock in my freezer for those busy times when I can’t cook something fresh. Meal prep and batch cooking have been a life saver, and I’m excited to share my tips and tricks.
- Fitness. I think movement is important for everyone. That’s right, I said movement is important, not fitness. It’s not so important what you do, it’s that you do something. Do you like working out at the gym? Home gym? Walking trail? Dancing to your fave playlist? All of the above work! I truly believe that daily movement of the body will lead to fitness….of mind, body, and spirit!
- Travel. My favorite travel involves beaches and fruity drinks! When those happy occasions arise, I will tell you all about them, particularly as they pertain to gluten-free eating. But my family also enjoys camping in our RV. We love weekend trips along with longer summer trips in new destinations. The best part of this is that I can bring my kitchen along and make my own gluten-free meals in a safe space!
All of the above topics are passions of mine, and I hope to share little nuggets with you to make your life a little easier. Changing little things at a time can really add up to a lot and be game changers in your health and life in general. Because YOU get to DESIGN your life!! And friends, that gets you a little closer to the Bright Side of Happy.
